My introduction to the culinary world was a part-time job at a famous Japanese restaurant when I was a student.
There, he learned the joys of the restaurant business and mastered the fundamentals of cooking through training with his friends and through passionate, friendly competition with one another.
This famous Japanese restaurant is a so-called large company. I have learned the know-how of building an organizational structure to conduct business efficiently as an organization by working for a large company,
When I was actually put in charge of the store, I realized that simply running an efficient organization would not work.
What I realized there is that in a great Japanese restaurant, customers are attached to the "people".
I originally wanted to do what I did, value the thoughts of the producers and chefs,
The desire to contribute to the development of food culture by communicating that desire.
I chose the path of "independence" to embody my ideas.
I hope that all of you who will work with me in the future will join me in cherishing the thoughts of the producers and chefs,
