The reason I entered the world of cooking was working part-time at a famous Japanese restaurant when I was a student.

It was there that I discovered the joy of the restaurant business, and I learned the basics of cooking by working hard with my colleagues.

This famous Japanese restaurant is a so-called big company.By working for a large company, I have acquired the know-how to build an organizational structure that enables efficient sales as an organization.

When I was actually put in charge of the store, I learned that simply running the organization efficiently was not enough.

What I realized there was that at a well-known Japanese restaurant, the customer was attached to the “person”.

I originally wanted to do it, cherishing the thoughts of producers and chefs,

The desire to contribute to the development of food culture by conveying that feeling.

I chose the path of "independence" to embody my thoughts.
